200 proof ethanol is pure, anhydrous ethanol — essentially 100% ethanol by volume with almost no water (typically ≥99.5%). Because U.S. proof is exactly twice the alcohol-by-volume percentage, 200 proof equals 100% ABV and 190 proof equals 95% ABV. The last ~5% of water cannot be removed by ordinary distillation, so 200 proof is produced by an extra dehydration step such as molecular sieves or azeotropic distillation.

For buyers, the choice between 190 and 200 proof is a cost-versus-dryness decision. 190 proof is cheaper and fine for most extraction, cleaning, and formulation work. 200 proof costs more but is required anywhere residual water would ruin a reaction, a chromatography run, or an electronics process. What does “proof” mean for ethanol?

In the United States, alcohol proof is defined as twice the percentage of ethanol by volume (ABV). A solution that is 50% ethanol by volume is 100 proof; one that is 95% is 190 proof; and pure ethanol is 200 proof. The scale is set by the U.S. Alcohol and Tobacco Tax and Trade Bureau (TTB) for tax and labeling purposes. So when a spec sheet lists “200 proof,” it is stating 100% ethanol by volume — the same thing chemists call absolute or anhydrous ethanol.

Proof is a volume measure, not a weight measure. That matters because ethanol and water do not mix by simple addition — the volumes contract slightly when blended — but for procurement the rule of thumb holds: divide the proof by two to get ABV.

200 proof vs 190 proof ethanol: what is the difference?

The practical difference is water content and how the grade is manufactured. Everything downstream — price, shelf behavior, and suitability for a given process — follows from those two facts.

Why can’t distillation get ethanol past 190 proof?

Ethanol and water form an azeotrope — a constant-boiling mixture whose vapor has the same composition as the liquid. At about 95.6% ethanol by weight the mixture boils at 78.2 °C, slightly below the boiling point of pure ethanol (78.2 °C is also close to ethanol’s own boiling point, which is why the two lock together). Once you reach that composition, boiling and condensing no longer enrich the ethanol, because the vapor is already the same strength as the liquid.

That azeotrope is the reason simple distillation tops out around 95% ABV, or 190 proof. To go higher you have to break the azeotrope with a method that does not rely on a boiling-point difference.

How is 200 proof (anhydrous) ethanol made?

Producers use one of three dehydration routes after distillation has reached ~190 proof:

Molecular sieves. The most common modern method. 190 proof vapor is passed through beds of zeolite whose pores (about 3 angstroms) trap water molecules while letting the larger ethanol molecules through. The result is ~200 proof, and the sieves are regenerated and reused.

Azeotropic distillation. A third solvent (historically benzene, now more often cyclohexane) is added to form a new azeotrope that carries the water off, leaving anhydrous ethanol behind.

Extractive distillation. A high-boiling agent such as glycerol or ethylene glycol changes the relative volatility of water and ethanol so the two can be separated fully.

What is 200 proof ethanol used for?

Anhydrous ethanol is specified wherever water would interfere with the outcome:

Analytical and lab work such as HPLC mobile phases and spectroscopy, where trace water shifts results; moisture-sensitive chemical synthesis and Grignard-type reactions; electronics and semiconductor cleaning; pharmaceutical and nutraceutical extraction requiring a dry solvent; and fuel-grade blending, where anhydrous ethanol is mandatory because water causes phase separation in gasoline.
